Chia Pudding
(2 servings)

2 cups unsweetened vanilla almond milk
6 Tablespoons chia seeds
2 Tablespoons maple syrup
Fruit and/or toppings of your choice

Mix all ingredients together really well and store in fridge overnight. Place half in a bowl and add your favorite fruit and/or toppings. I added sliced strawberries, blueberries and unsweetened coconut chips.

Lunch Wraps

2 coconut wraps
1/2 cup Hummus–my recipe:
Favorite vegetables

Spread each wrap with 1/4 cup hummus, top with your favorite veggies (I used spinach, cucumber, shredded carrots, tomato, red pepper and avocado). Roll up and enjoy!

Slow Cooker Chicken Ramen Soup

1 1/2 pounds chicken thighs
1 quart chicken bone broth,
1 1/2 to 2 cups snow peas
2 medium carrots, sliced
3 stalks celery, sliced
1 medium onion, chopped
3 cloves garlic, minced
1/4 cup coconut aminos or soy sauce
1 teaspoon red pepper flakes
salt and pepper to taste
cilantro, if desired
10 ounce package rice ramen noodles

Place everything except ramen noodles in slow cooker. Cook on high for 5 hours. Break up chicken thighs. Add salt and pepper and adjust seasoning, if needed.

Cook ramen noodles according to package.

Dish soup into bowls, top with noodles and cilantro, if desired.
