Super healthy bran and sultana muffins
Great for breakfast. Full of fibre
Low GI, keep you fuller, longer
Pre heat the oven to 180 c or 350 f
Ingredients:
1 1/4 cups or 300mls whole meal flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
11/2 cups or 360mls of all bran cereal
1/2 cup or 120mls of sultanas
1 egg well beaten
1/4 cup or 60mls or vegetable oil
1 1/2 cups or 360mls of skimmed milk
1/3 cup or 80mls of organic molasses
Firstly soak the All bran cereal in the milk for about an hour
Add in the vegetable oil, the egg and the molasses and combined. Set aside
In a separate bowl combine the flour, baking powder, baking soda, salt and sultanas
Combine the two but do not over beat
These took 17 minutes to bake in a muffin tin with muffin liners.
Great to freeze and have daily for an excellent balanced breakfast with fruit.
