Healthy Recipes that Freeze Well -Abbey Sharp on Marilyn Denis Show

Weeknights can be crazy so having some homemade heat and eat meals in the freezer that you can make when you have some time on the weekend can really save you from ordering in or taking out. Abbey gives tips on which foods freeze well and which foods don’t freeze well. She believes that best kinds of recipes for freezing are those in small single serve portions so you don’t have to thaw out an entire family size portion and then try to refreeze what you don’t eat. On the Marilyn Denis Show, Abbey begins two fool proof healthy recipes that freeze well.

To make healthy Southwestern meatloaf muffins that freeze well, Abbey mixes sauted frozen corn, bell pepper, onion with an egg, old fashion oats (high fibre and Gluten free), salsa, ketchup, and minced up chipotle in adobo, extra lean ground beef, and salt and pepper. Then using an ice cream scooper, put about a half cup into 12 greased muffin pans. Brush them with a little ketchup and finely shredded old cheddar on top. Bake for 350 for 25 minutes.

Next is healthy chicken nuggets- another healthy recipe that freezes well. Process garlic, old fashion oats, parmigiano cheese, and our spices- salt, paprika, pepper, and oregano. Then using skinless boneless chicken breasts cut into two-bite size nuggets, brush in mustard and toss with breadcrumbs.
Bake for 15 minutes at 425F until golden brown and now we’re ready for the week. Now, to freeze, take the meatloaves out of the muffin pan and put everything on a tray lined with wax paper, cover them in plastic wrap and pop in the freezer until frozen- it only takes about 1 -2 hours. Once they’re solid, you can transfer them separately to freezer bags with a labeled date so you know you’ve got 3 months after that to eat them up. These rewarm in a microwave for 1-2 minutes or in the oven at 400 for 10 minutes.
