Austin Texas firefighter, Rip Esselstyn, made a bet with a fellow firefighter, JT: if JT would just eat the way Rip ate for 28 days, then JT’s cholesterol would come down from 364 to 150.

JT’s father and grandfather had both died in their 50s from heart attacks, so bringing JT’s cholesterol down was crucial for him .

Rip won the bet — and saved JT’s life.
