Mediterranean Diet Recipes – Roasted Chicken Recipe
INGREDIENTS
4 – long red Dutch chilies, seeded, chopped finely
4 – garlic cloves, chopped finely
1 tbsp – ground cumin
1 tbsp – ground coriander
1 tbsp – lemon rind, grated finely
1 tbsp – lemon juice
1 tbsp – olive oil
1.6kg – whole chicken
1 – lemon

PREPARATION
1. Wash chicken under cold water, pat dry with absorbent paper.
2. Place chicken in a mixing bowl. Let it come to room temperature.
3. Preheat oven to 350°F .
4. Combine chili, garlic, spices, rind, juice and oil in a small bowl.
5. Using spoon, spread the mixture all over the chicken and marinade.
6. Place chicken in a roasting pan with breast side up.
7. Cut lemon into 6 wedges and place in the cavity and around the chicken.
8. Place it in the oven and roast for 1 ¼ –1 ½ hours.
9. No flipping, no basting, no checking on the chicken unless smoke starts pouring out.
10. Chicken is done when its internal temperature is 165°F.
11. Let chicken rest for 15 minutes before serving.
