BREAKFAST:
PEPPER Omellete
– eggs
– 2 tablespoons skim milk
– 1 small onion
1 red pepper
1 tablespoon olive oil
1 tablespoon chopped parsley

Beat eggs with milk.
Cut the onion and bell pepper.
heat the olive oil, fry the onion and pepper tacos. Pour the egg mixture over and let curdle for 2 or 4 minutes. Turn it over to the omelette and finish it to do. Sprinkle with parsley.

GREEK SANDWICH
2 large panacecillos of wholemeal bread.
6 slices of cucumber
6 slices of tomato
60g feta cheese slices
6 slices olives
oregano, pepper.

Cut the rolls in half. Fill with cucumber, tomato, feta cheese and olives. Season with oregano and pepper.

RATATOUILLE WITH TOFU
(Ingredients for 4 people)
500g tomatoes, red peppers, yellow, zucchini, eggplant and onions
2-3 cloves garlic
2 tablespoons olive oil
400g of tofu
1 bunch fresh basil
2 sprigs of thyme, rosemary and oregano
2-3 bay leaves
salt pepper

wash vegetables, peel tomatoes and slice them. Peel the onions and cut into blocks as the rest of the vegetables. Peel the garlic and squeeze.
Heat oil in a large pot. Saute the vegetables varieties and get them out.
Cut the tofu tacos, basil and chop fine.
Mix the vegetables. Add herbs with laurel, garlic and tofu. Season with salt and pepper and cook for 10 minutes. Add the basil.

Between meals
A piece of fruit or a slice of whole grain cake
