Cauliflower rice or cauliflower couscous is a great low-carb substitute for grains on the Keto or Paleo diet. Plus: Two easy cauliflower rice recipes – chorizo pulao and mushroom “risotto” – that can be an accompaniment for curries or eaten on their own.
Rice is definitely one of the things I miss the most on the Ketogenic diet, particularly because, as Indians, we tend to eat a lot of curries and on the diet you have nothing to mop them up with. This cauliflower rice or couscous makes a fantastic neutral substitute – it also has none of that off-taste you’d associate with boiled cauliflower.

For the Cauliflower Rice
✎ Ingredients:
– 1 Cauliflower
– Water
– Salt or Stock Cube.
✎ Preparation:
1. Using a food processor blitz the cauliflower till it’s a consistency of cous cous. You can also use a grater or the grater attachment in the food processor for a more ‘rice’ like shape.
2. Cook the cauliflower with water till it is tender and season with salt or a stock cube
3. Cauliflower rice. Done!
Cauliflower Rice Chorizo Pulao
✎ Ingredients:
– Cooked cauliflower rice
– Chorizo Sausage/Goa Sausage
– Onion
– Cumin
– Tomato
– Ginger Garlic Paste
– Water
– Olive Oil
– Tumeric
– Red Chilli Powder
– Coriander
✎ Preparation:
1. Fry the chorizo with a bit of olive oil.
2. Add in the cumin seeds, onion and ginger garlic paste and cook
3. Add in the tomato as well as the tumeric and chilli powder.
4. Add a splash of water and cook out
5. Season with salt and pepper
6. Add the cauliflower rice and cook for 2 minutes
7. Finish with fresh coriander and crispy fried chorizo
8. Serve
Cauliflower Rice Mushroom Risotto
✎ Ingredients:
– Cooked cauliflower rice
– Butter
– Garlic
– Mushrooms
– Fresh Cream
– Parsley
– Parmesan Cheese
– Salt & Pepper
✎ Preparation:
1. Melt the butter in a pan
2. Add garlic and pepper
3. Once the garlic starts to brown add mushrooms and cook till they get some colour
4. Add the cauliflower rice and mix well
5. Add the fresh cream and grated parmesan cheese and mix well
6. Sprinkle the fresh parsley and serve
